Common questions

How do I stop over-pouring?

Use jiggers or measured pourers, count inventory weekly and compare what you used with what you sold, and train every bartender on the same pour sizes. The pour cost calculator shows what an extra splash costs.

How often should draft lines be cleaned?

Follow the schedule your beer distributor or line-cleaning service recommends, and keep a log. Dirty lines cause off-flavors and extra foam, which is beer you pay for but can’t sell.

How long does wine last once opened?

It depends on the wine and how you store it. Re-seal it, refrigerate it, use a preservation system for wines sold by the glass, and track how much you pour away.
